I have made and played many flat top steel string guitars over the years. Never have I been more impressed than with the sound quality of the double top guitar. These guitars are referred to as "double tops" because of their particular construction style.
Essentially, the top is composed of three sandwiched layers. The inner and outer layers are 0.50mm tonewood with the inner core being a 2mm thick material called Nomex honeycomb. Nomex is a coated fiber material that when used as a core produces a guitar top of exceptional strength and stiffness that is much lighter in weight than a traditional solid wood top.
A lighter weight top will resonate much more easily and interact with the player in a far more dynamic fashion. Delicate passages are full and deep. Loud passages are robust and powerful. The guitar becomes a more complete extension of the player due to this improved responsiveness. I have never heard or played any flat top steel string that comes close to this level of dynamic response.
