The name of the recipe is a bilingual play on words. The important ingredient in these eggs is rosemary,
so I named them eggs Clooney after Rosemary Clooney. In translating it to French, Clooney became Cluny.
Ingredients
- Eggs (for however many you are feeding)
- Green onion (one for each two eggs) - sliced thinly
- 2 cloves garlic, chopped finely
- Tbs fresh rosemary, chopped finely
- Tbs dried cilantro (fresh is good but be careful not to use too much)
Instructions
Beat the eggs in a bowl.
Mix the cilantro into the eggs.
Salt the eggs to taste.
Sautée the onions, garlic, and rosemary in a couple tbs. of olive oil (anything else, and this becomes an inferior dish).
Add the egg mixture to the sautée and slowly scramble (low heat. take your time).
Just before you're ready to serve, sprinkle liberally with parmesan and mix that in.
